PASTA OF DURUM WHEAT: ORECCHETTE, MACCARONI, BUCATINI, PICI
Durum wheat semolina, to be named as such, must be the result of the tracing, rolling and drying of a dough prepared exclusively with durum wheat semolina and water, without the addition of colorants and preservatives. The particular properties of hard wheat make the starch not disperse, and therefore the pasta does not scratch, ensuring the baking seal and a plate of unique and authentic taste.
TAGLIATELLE AND FETTUCCINE WITH EGG
Made with eggs from free-range hens that are fed exclusively with non-GMO cereals, and they have a genuine scent and an authentic sunny color. In the production, the Campofilone has been able to reproduce the same traditional process to make egg pasta as it was made in the past by the old ladies of the Campofilone village.

The Strangozzi of Umbria, also known as “strozzapreti”, are a long square or rectangular paste suitable for a wide variety of sauces and preparations. They are typical of Umbria and in particular of Spoleto, where they are very much used for recipes based on mushrooms and truffles.
